Gallo pinto by Jack Roper


Some people like to write about their experiences working their first turtle, others seeing a jaguar, a sloth or being woken by howler monkeys. And me? I’m easily pleased, Gallo Pinto all the way.

Gallo Pinto is a regularly consumed dish at Caño Palma, some say it’s simply rice and beans (shame on them). But noooo it’s so much more than that, fry a little garlic, onion and red pepper, add a little lizano sauce (a Costa Rican delight) to last nights leftovers and the humble rice and bean is transformed….Gallo Pinto, the best Costa Rican dish I’ve sampled so far, hands down.
